Hand-picked olives are sown on the same day to maximize the right organoleptic properties of the oil. The oil is kept in stainless steel containers that are stored in a cool place without temperature differences.
It is not easy to determine the optimal start date for harvesting in order to obtain excellent extradition oil, but the harvest must be done before the end of the biological cycle.
Viva Diego is produced in two types of extravirgin olive oil. One of the extravirgin oil Viva Diego has a lighter taste and character with the same amount of yellow and green chromatic components. The herbal and floral scent notes are expressed at medium intensity but continually characterize the aroma in the mouth, and the lively and progressive but yet lighter spicy aroma prevails.
The second line of extravirgin oil gives the product a stronger taste and character, its appearance is intensely golden, with a clear green reflection, opens to the smell of an elegant bouquet dominated by fresh almond taste. The structure is compact, enlivened by a constant bitter and spicy wire that is well connected with the long scent of green apple and almond.
